Buying a new bed or mattress and grabbing whatever pillows happen to be in the cupboard is a common way to undercut a good night sleep you just paid for. The mattress does most of the work, but the pillow is what actually holds your neck and shoulders in line with it. Get that mismatched, and even the best mattress feels off.
A pillow's job is to fill the gap between your head and the mattress so your spine stays roughly straight, whatever position you sleep in. That gap is different for a side sleeper (wider, needs a firmer, higher pillow) than a back sleeper (shallower, needs something flatter and softer). A lot of budget pillows use a synthetic cover that traps heat. Look for a breathable natural fibre cover such as cotton percale, which lets air move through rather than holding warmth against your face all night. It also matters for hygiene: a woven cotton cover is easier to keep clean and less likely to irritate sensitive skin than a cheap polyester one.

Pillows are almost always sold as a pair rather than individually, and for a practical reason: most people sleep with two, one for support and one to adjust to (or simply for comfort when changing position through the night). Check the washing instructions before you buy. A pillow that can go straight into a normal 40°C wash is far easier to keep fresh than one that needs dry cleaning or spot cleaning only. Regular washing matters more for pillows than most other bedding, since they sit directly against your face and hair every night.
